How do you deliver caviar?

Black caviar is a very delicate product that can get spoiled really fast, just like any seafood.  In order to keep it fresh we deliver with the help of UPS courier by airplane to EU countries and with DPD courier in Baltic states.  For long distances, we pack caviar in the thermal boxes that keep correct temperature for up to 48 hours.

Is it better to keep caviar in refrigerator or freezer?

The correct temperature for storing caviar or any seafood product is -2C.  Only a few refrigerators can be adjusted to keep this exact temperature.  Usual household refrigerator is +2C near the back wall and +6C (or even +10C) near the door.  For this reason seafood is not kept for long in the refrigerator and usually place into the freezer, where temperature is around -18C.  Once caviar reaches -4C it will start to freeze that may lead to lowering the quality of the product but not necessarily will, a lot depends on the initial product condition.  Thus for regular household it would be advisable to purchase the amount of caviar that can be consumed in 1 week and let professionals store caviar for them.  If one still desires to buy more then intended for 1 week of rations, it is best placed at the far back of the refrigerator and deduct 4 months from the shelf life.  Usually the shelf life would be twice smaller in regular household refrigerator.
